Yogurt Cake (Keik me Yiaourti)

1/2 cup (1 stick) butter, room temperature
2 1/2 cups sugar
5 eggs
5 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
2 1/2 cups plain yogurt
Juice of 2 oranges
1 teaspoon vanilla
1/2 cup almonds, chopped

Syrup:
3 1/2 cups sugar
4 cups water
1 tablespoon lemon juice

Butter and lightly flour a 14 1/2 x 10 1/2 inch baking pan. In a mixing bowl, cream together butter and sugar. Add eggs one at a time, beating well after each addition. Sift together the flour, baking powder and baking soda. Add flour alternating with yogurt and orange juice, mixing thoroughly. Add vanilla and almonds. Bake in a preheadted 350 degree oven 45 to 50 minutes. Insert knife in center to test; if done it should come out clean.

Syrup: In a saucepan over medium high heat, combine sugar, water, and lemon juice. Bring to a boil. Reduce heat and simmer for 25 to 30 minutes until thick. Pour syrup over cooled cake.

Serves: 35-50
